Cold poached salmon is great for dinner parties and brunches large and small. Since all the work is done ahead of time it is also a stress reducer. And it’s easy. And, it’s elegant. And … you can serve it with a variety of sauces that you can buy at the grocery store – tartar sauce, dill sauce, cocktail sauce, flavored mayo, ranch dressing …. Or even just plain lemon. This recipe, using a 3 pound salmon filet, should serve 6-9 people, so adjust the amount of salmon accordingly (a good rule of thumb is 2-3 servings per pound).
